I was inspired to make some truffles in a Rachel Khoo book but added and changed a few things in the recipe that makes them vegan and healthier...recipe below...
zest of an orange
20g coconut oil (slightly warm will be easier to blend with fruit and pistachio)
pinch of sea salt
100g plain choc
70g blanched and toasted almonds
I haven't got weighing scales, you can do the measurements roughly
- Blend all ingredients together (not choice or almonds!)
- Roll into balls
- Melt choc in bain marie
- using forks roll balls into melted chocolate, then the chopped almonds
- Leave in the fridge for a little while on a plate or greaseproof paper...the coconut will solidify

Summer feels like it's here...yip hip horray!
I'll have a stall at the Tobacco Factory Arts Trail Market this Saturday 14th May
....and then I'm taking a break...too many boat jobs and river exploring, veg patch nurturing and mud painting to do...

I might post the occasional cake recipe...or flat bread spinach zumac yumminess...really getting into making Turkish food...
juice of 1 lemon
1 garlic clove
1 large spoon of tahini
salt and pepper
and some olive olive oil
Roast aubergine then scoop out or keep skin on, blitz together with other ingredients
